  1. Marinade Chicken with lemon juice for 10'. In a large wok with 1/2 cup of oil, heated, add the chicken pieces and stir fry. Browned on both side, don't overcook and then remove, drain, set aside. Steam Potatoes for 20'. Remove set aside..
  2. Put 1/2 cup oil,fry onion till aroma then add ginger,garlic,mushrooms, capsicum,cardamoms&stir fry for 4 minutes,then add tomatoes,celery, carrots, lemon leaves&lemon rind.Mix all.Add 100ml or more water it depends on individue,1 cube chicken bouillon, salt, black pepper and mix all& let it boil.Add the cooked potatoes&cooked chicken&mix all together,then turn down the heat&simmer 5', cover with the lid on.Test the seasoning.When meat is tender,add the coriander leaves&mix, cook 1'.Turn off.
  3. Discard the lemon leaves. Scoop out the soup onto a large deep bowl. To serve with a bowl of steamed Jasmine rice or with Bread Rolls.
